There's a new dish in town.
In my quest to add more variety to my 6 night dinner rotation, I've found the ABSOLUTE PERFECT IDEA.
Pancakes.
Breakfast for dinner.
I've used Breakfast for Dinner as a treat, and sometimes as a last resort, because there was absolutely nothing else to fix.
But pancakes for dinner is turning out to be one of our favorite options.
Bacon or sausage, pancakes (blueberry or plain), fresh fruit, milk and OJ and my kids are stuffed and properly "nutritioned" for the night.
Check out this recipe and tips for delicious pancakes. It's adapted from a classic Martha Stewart recipe.
If you're using pre-mixed pancake mix, I've found the Hungry Jack pancake mix is the best, or if you want to go totally organic, HT carries Bob's Red Mill brand pancake mix.
Here's what we're having this week:
Monday - Steaks in the skillet, homemade fries, broccoli
Tuesday - Lemon pepper chicken and pasta, asparagus, salad (adopted from linked recipe. I'm using the spices, but I'm using tenderloins, cooked in a skillet and serving over pasta and asparagus....)
Wednesday - out
Thursday - Chicken fajitas, refried beans, chips and homemade salsa
Friday - Pancakes
Saturday - poor Ken is on his own, kids and I will be at my mom's
Sunday - TBD (maybe homemade chicken noodle soup, made with HT rotisserie chicken?)
